Here again my lovely crispy hazelnut cookies!
I guess I baked these cookies for six or seven times in a few months. They simply became one of my favourites. They are so crispy. Moreover they are so cute in shape, and easy to make.
On the other hand I also understood that you need to practice even the simplest recipe as much as possible to reach the best solution. Whenever I bake, and bite one thumbprint cookie I just remember Cenk of Cafe Fernando,and sending my best prayers to him as I swallow in pleasure.

Crispy Hazelnut Cookies
makes 25 approx.
Ingredients
1 cup all purpose flour
1/2 cup ground hazelnut
125 gr butter (at room temperature)
1/4 cup sugar
Any filling you like
Method
1.Mix sugar and butter in a bowl for 5 min.s with a mixer.
2.Blend flour and ground hazelnut, and add it to butter mixture. Stir untill combined well. You can knead it if needs.
3.Chill the dough in the fridge for 30 min.s
4.Meanwhile base two baking trays with parchment paper. Preheat oven to 180-200 C / 375-400 F.
5.Divide dough into 25 pieces or take a teaspoonfull of dough. Round them in your hand, and make a hole with your little finger. (But do not push your finger all the way. You will put the filling there) And do not flatten ever.
6.Place the cookies 1-1,5 inch apart on trays, and bake until they are golden brown.
Cool on wire rack, and fill the holes with anything you like. I used blueberry, and lingonberry jams, peanut butter and gummastic jam which I adore! Nutella is another idea of filling. And next time I will use lemon curd I guess.
